Material: soybean sprouts, vermicelli

Accessories: shallots, red peppers, peppercorns, ginger, garlic

1. After the bean sprouts are bought, they are fully cleaned to remove the dust and impurities on the surface.

2. Garlic, cut garlic, ginger and ginger slices, cut them well and put them together for later use. Add appropriate amount of Chinese prickly ash and red pepper to the bowl, and cut two shallots into long pieces.

3. Boil a pot of boiling water in the pot and put in the vermicelli. Cook the vermicelli for 5 minutes to make the vermicelli soft and cooked through. You can also soak the vermicelli in boiling water for 10 minutes in advance.

4. Use the boiling water in the pot and then add the bean sprouts to blanch. After blanching the bean sprouts for 1 minute, take out the water, which will facilitate subsequent cooking.

5. Start another pot, heat the pot and add an appropriate amount of vegetable oil. After the oil is hot, add green onion, ginger, Chinese prickly ash and red pepper, and stir-fry for a while to get the aroma of the auxiliary ingredients.

6. After the auxiliary materials are fragrant, add soybean sprouts, stir-fry for a while, and fry the soybean sprouts until fragrant.

7. Stir-fry the soybean sprouts for a while, then add the vermicelli, and stir-fry the vermicelli and soybean sprouts evenly.

8. After stirring well, add 1 gram of sugar to enhance freshness, 3 grams of light soy sauce, 3 grams of oyster sauce, and 2 grams of salt, and stir fry the seasoning to melt evenly.

9. Finally, add the scallions, stir fry again and it will be out of the pan.
